The History of Recipes
Academics have tracked the existance of recipes back into the far past, certainly as far back as the Egypt of the Pharoahs, and potentially, even further back. Interesting though that maybe, mostly, these early recipes were just very basic pictorial instructions for meal preparation.
Interestingly, the oldest recipe discovered so far, according to academics are a few ancient tablets in the Sumerian language describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel `blissful`. During Roman times around 25BC a man called Apicius created a few documents describing recipes enjoyed by his fellow Romans. In his scrolls, he tells us how the meals were split into appetizers, main course and desserts, a very modern way of dining. This early Roman chef informs us how the cooks of Roman times made use of a wide range of spices, including a few you will know such as thyme, rue and asafoetida. As our culinary historical trip moves on a few more years we have two interesting books published in the fourteenth century : a cookery book published under the title `Forme of Cury`, and another, similary named `Curye on Inglish`. Although the titles sound familiar, these two books are not about the indian curry that we all know today, but rather recipes for the types of food on the tables of the rich people of the period. In the fifteenth century, knights returning from the crusades brought us many foods and spices from Arab cuisine, including spices like coriander, parsley, basil and rosemary. The introduction of these new herbs and spices led to an increase in recipe books, most of which still exist in private libraries. By the arrival of the 1900s, cooking publications are in high demand, as a result of higher levels of literacy, people having increased leisure time and having more disposable income. |
