The History of Recipes
Food historians have tracked the existence of recipes back into distant history, in truth as far into history as ancient Egypt, and maybe even further. However, generally, these old records were just primitive hieroglyphic instructions for preparing food.
Fascinatingly, the most ancient recipe discovered so far, according to Professor Solomon Katz, are a few stone tablets in ancient Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel blissful and exhilarated. As our culinary historical trip moves to more modern times we have two interesting recipe books which appeared in the 1300s - a recipe book published under the title `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Perhaps surprisingly, these are not about the curry that we all know today, but rather descriptions of the types of meals on the tables of the rich people of those days. In the 15th century, knights returning from the crusades brought us many new foods and herbs from Arab cuisine, including spices such as coriander, parsley, and rosemary. These new foods and spices prompted an increase in manuscripts on cooking, most of which still exist in private collections. Over the next few centuries, the wealthy families of Europe tried to serve up the most exotic meals, and because of this chefs and their recipes were highly sought after. Nevertheless, it wasn`t until the nineteenth century that cooking and recipe books became really popular. Mrs Beeton in the UK, and Fannie Farmer in the US, dedicated their lives to collating, testing, and recording recipes of the day. By the arrival of the twentieth century, recipe books were increasing in popularity mostly as a result of higher levels of literacy, increased leisure time and being a little richer. The introduction of television brought us celebrity chefs and the recipe books that accompanied them. Which brings us neatly to the present day and the invention of the internet, allowing everybody to search through thousands of recipes like those on this site. |
