The History of Recipes
Experts have proved the existence of recipes back into history, in truth as far back as the ancient Egyptians, and maybe even further. Interesting though that is, these, old recipes were just basic hieroglyphic or cunieform instructions for preparing food.
During the time of the Roman Empire a man called Apicius compiled a few documents which described recipes cooked by the Romans. In his works, Apicius recounts how the meals of wealthy Romans were separated into appetizers, main course and afters, something that is very familiar to us today. This early Roman chef describes how the Roman chefs were skilled in the use of many different herbs and spices, including some that we all recognise like basil, rue and dill. Over the following few hundred years, the wealthy families of the West tried to offer the most exotic banquets, and consequentially chefs and their recipes became highly prized. However, it was during the nineteenth century that cooking and recipe publications rose to prominence. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, devoted much of their lives to assembling, verifying, and writing down recipes to allow everyone to enjoy them. By the arrival of the 20th century, recipe publications are starting to become popular mostly due to better eduction, leisure time and disposable income. |
