The History of Recipes
Historians have proved the existence of recipes back into distant history, certainly as far back as the ancient Egyptians, and quite possibly further than that. Having said that, sadly, these old cook books were just very basic pictorial recipes for meal preparation.
Interestingly, the most ancient recipe discovered so far, according to historians are a few ancient tablets in Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel wonderful. Progressing into The time of the romans around 25BC a roman called Apicius compiled a collection of documents which described recipes enjoyed by his fellow Romans. In his works, Apicius recounts how the roman meals were divided into starters, main meal and dessert, something that is very familiar to us today. He also informs us how the chefs of Roman times made use of a good variety of herbs, including a few that are still present in modern kitchens for example basil, fennel and parsley. During the next few hundred years, the upper-class families of the West tried to serve up the most exotic meals, and because of this the best cooks and their recipe collections were greatly in demand. Nevertheless, it was during the 19th century that haute cuisine and recipe publications rose to prominence. The Famous Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated years of their lives to collecting, verifying, and recording the recipes of their peers. By the time we get to the twentieth century, cookery publications were increasing in popularity mostly due to higher levels of literacy, people having more leisure time and having more money. |
