The History of Recipes
Food historians have proved the existance of recipes way back into distant history, at least as far back as the ancient Egyptians, and maybe further still. Interesting though that maybe, sadly, these old records were just very simple pictorial, hieroglyphic or cunieform instructions for preparing meals.
Progressing into The time of the romans 25BC a man called Apicius compiled some documents detailing recipes prepared by wealthy roman citizens. In his works, he describes how the meals were split into appetizers, entrees and dessert, a style of dining still practiced today. Additionally, he describes how the ancient chefs were skilled in the use of many herbs, including a few that are still present in modern kitchens such as thyme, fennel and parsley. Over the next few centuries, the wealthy families of Europe competed to lay on the best banquets, and as a result the best chefs and their recipe collections became highly prized. Nevertheless, it was during the 1800s that fine cookery and recipe collections really came of age. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, spent years to collating, verifying, and recording the recipes that were being prepared for the better households. The introduction of television brought us TV cooks and the spin-off recipe books. Which pretty much brings us up to date and the internet revolution, permitting us all to access thousands of recipes like the ones you can find on this web site. |
