The History of Recipes
We can follow the history of `recipes` far back into the distant past, at least as far back into history as the Egyptians, and possibly even further than that. However, these, old cookbooks were just very basic pictorial instructions for preparing food.
In fact, the oldest recipe discovered so far, according to experts in ancient history is a series of stone tablets in the Sumerian language which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel wonderful. Progressing into The time of the roman empire 25BC a roman called Apicius created a collection of scripts describing recipes prepared by wealthy Romans. In his works, he describes how the meals of wealthy Romans were divided into hors d`oeuvre, main meal and afters, something we still use today. Aspicius also recounts how the ancient Romans were skilled in the use of many aromatic flavours, including a few you will know such as thyme, mint and asafoetida. In the fifteenth century, people returning from the crusades brought us a variety of spices and herbs from the holy land, such as basil and coriander. These new foods and tastes prompted an explosion in manuscripts on cookery, most of which are kept safe in private cookery archives. During the succeeding few hundred years, the rich and powerful families of the West strove to serve up the most exotic banquets, and consequentially cooks and their recipe collections were at a premium. However, it wasn`t until the 19th century that cooking and recipe books reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted much of their lives to collecting, trying out, and publishing recipes for their fellow cooks to enjoy. By the arrival of the 1900s, cookery books are greatly in demand mostly due to better eduction, people having more free time and having more disposable income. |
