The History of Recipes
We can follow the history of `recipes` way back into antiquity, in fact as far back as the early Egyptians, and possibly even further than that. Having said that, generally, these old recipes were just simple hieroglyphic instructions for preparing food.
The truth of the matter is, the oldest recipe found, according to experts in ancient history are some clay tablets in ancient Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel exhilarated and blissful. As we move into Roman times 25BC a man called Apicius assembled a number of documents detailing recipes prepared by wealthy Romans. In his works, he describes how the meals of wealthy Romans were divided into starters, main meal and dessert, something that is very familiar to us today. Aspicius tells us how the early Romans used a good variety of herbs and spices, including many that are still in use today like basil, mint and parsley. Later, in the fifteenth century, the Crusaders brought back a variety of foods and herbs from the East, including coriander, basil and rosemary. These new foods and tastes was responsible for an eruption in recipe publications, some of which are kept safe in private cookery archives. During the next few centuries, the powerful families of Wesstern Europe competed to lay on the most exotic meals, and as a result the best cooks and their recipes increased in prestige. However, it was during the 19th century that haute cuisine and recipe publications became popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted their lives to collecting, verifying, and recording recipes to allow everyone to enjoy them. By the advent of the 20th century, recipe books are highly popular mostly as a result of increased literacy, more leisure time and a general increase in wealth. |
