The History of Recipes
Written recipes as a concept can be tracked back into the distant past, in fact as far back into history as the Egypt of the Pharoahs, and maybe further still. Interesting though that maybe, these, early records were just basic hieroglyphic or cunieform instructions for preparing food.
Fascinatingly, the most ancient recipe discovered so far, according to historians is a collection of tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `exhilarated, wonderful and blissful`. Progressing into The time of the roman empire around 25BC a man called Apicius assembled a number of documents showing how to cook the recipes enjoyed by the Romans. In his scrolls, Apicius tells us how the roman meals were split into hors d`oeuvres, entrees and afters, something that is very familiar to us today. Additionally, he describes how the ancient cooks used many different spices, including a few you will know such as basil, fennel and parsley. In the 15th century, the Crusaders brought back a variety of foods and spices from middle-east cuisine, including coriander, parsley, basil and rosemary. The introduction of these new herbs and spices created an outbreak in manuscripts on cookery, some of which are kept safe in private collections. Over the following few centuries, the powerful families of Wesstern Europe strove to serve up the most extravagent banquests, and because of this the best cooks and their collection of recipes were much in demand. Even so, it wasn`t until the 1800s the formal cooking and recipe publications reached a high level of popularity. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated their lives to assembling, testing, and writing down recipes for their fellow cooks to enjoy. By the arrival of the twentieth century, recipe publications were greatly in demand as a result of higher levels of literacy, people having more leisure time and having more money. The introduction of television brought us TV chefs and the demand for the spin-off recipe books. Which pretty much brings us up to date and the internet revolution, allowing everyone to search through thousands of recipes like those on this web site. |
