The History of Recipes
It is possible to read the history of meal recipes way back into history, in fact as far back as the early Egyptians, and maybe even further. In practice though, generally, these old cook books were just simple pictorial instructions for preparing food.
In fact, the most ancient recipe found, according to experts in ancient history are a few ancient tablets in ancient Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel blissful. Later on, in The time of the roman empire 25BC a roman called Apicius compiled a few documents showing how to cook the recipes cooked by his fellow Romans. In his scrolls, Apicius recounts how the meals were separated into appetizers, entrees and afters, a style of dining still practiced today. He also describes how the chefs of Roman times were skilled in the use of many spices and herbs, including many that are still in use today such as thyme, mint and dill. Later, in the fifteenth century, people returning from the crusades brought us a variety of foods, spices and herbs from the East, including spices such as coriander, parsley, and rosemary. These new culinary innovations led to a surge in cookery books, many of which are now in private libraries. For the decades that followed, the rich and powerful families of Europe strove to offer the most exotic banquets, and as a result chefs and their recipes increased in prestige. Notwithstanding that, it was during the 1800s the formal cooking and recipe collections rose to prominence. The Famous Mrs Isabella Beeton in the UK, and Fannie Merritt Farmer in the US, devoted much of their lives to collating, testing, and recording the recipes that were being prepared for the better households. By the time we get to the 1900s, cookery publications are greatly in demand due to increased literacy, increased leisure time and a general increase in wealth. |
