The History of Recipes
It is actually possible to trace the history of written recipes far back into antiquity, certainly as far as ancient Egypt, and quite possibly further than that. Interesting though that maybe, in the main part, these ancient cook books were just basic hieroglyphic or cunieform instructions for preparing food.
As we move into Roman times 25BC a roman called Apicius wrote some documents detailing recipes prepared by wealthy roman citizens. In his scrolls, he tells us how the meals of wealthy Romans were separated into appetizers, main meal and desserts, a style of dining still practiced today. Aspicius also describes how the Roman cooks used a wide range of herbs, including a few you will know such as thyme, rue and dill. Later, in the 15th century, people returning from the crusades brought back a variety of foods and herbs from the holy lands, including parsley, basil and rosemary. The introduction of these new herbs and spices led to an explosion in books on cooking, many of which are now in academic collections. The revolution that is television gave us TV cooks and the recipe books that accompanied them. Which brings us neatly to the present day and the internet revolution, permitting everyone to search through thousands of recipes just like those on the site you are now reading. |
