The History of Recipes
We are able to trace the history of written recipes back into distant history, certainly as far into history as the ancient Egyptians, and potentially, even further back. In practice though, generally, these ancient records were just very basic hieroglyphic or cunieform recipes for meal preparation.
As we move into Roman times 25BC a man called Apicius compiled a number of scripts describing recipes cooked by his fellow Romans. In his publication, Apicius recounts how the meals were separated into appetizers, entrees and dessert, a very modern way of dining. He also recounts how the Romans used a wide range of spices, including some familiar names like bay, fennel and asafoetida. During the next few centuries, the wealthy families of Wesstern Europe competed with each other to lay on the most exotic banquets, and because of this the best chefs and their recipes were at a premium. Notwithstanding that, it was during the 1800s that formal cookery and recipe books became popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted their lives to assembling, testing, and writing down recipes to help cooks of their time. By the advent of the 20th century, recipe publications are in high demand, mostly due to higher levels of literacy, people having increased leisure time and having more disposable income. |
