Ingredients
1 gal green tomatoes
1 dozen
1/2 cup salt
1 large onions
Directions
Grind tomatoes and onions together. Add salt and cover with water,
let stand 10 minutes. Drain well. Add:
1 dozen peppers (green and red) 2 hot peppers 1 dozen pickles (canned
ones can be used) 1 tbsp. celery seed 3 1/2 lb. sugar 1 qt. vinegar
Cook 15 minutes. Seal while hot.

The History of Recipes
It is quite feasible to trace the history of written cooking instructions way back into antiquity, certainly as far as pharonic Egypt, and possibly even further than that. Interesting though that is, mostly, these early recipes were just very basic pictorial, hieroglyphic or cunieform instructions for preparing food.
As we move into The time of the romans 25BC a roman called Apicius compiled a few scripts detailing recipes prepared by wealthy Romans. In his scrolls, he describes how the meals of wealthy Romans were separated into starters, main meal and dessert, a style of dining still practiced today. He also tells us how the cooks of Roman times were skilled in the use of a good variety of herbs and spices, including a few you will know such as basil, rue and parsley. Later, in the 15th century, people returning from the crusades brought us a variety of foods and spices from the Middle-East, such as rosemary and coriander. These new foods and tastes was responsible for an eruption in publications on food, many of which are kept safe in private libraries. By the time we get to the twentieth century, cookery books were highly popular as a result of increased literacy, people having more spare time and having more money. |
