The History of Recipes
Academics have proved the existence of recipes way back into history, in truth as far back into recorded history as early Egypt, and maybe further still. Interesting though that is, mostly, these ancient cook books were just primitive pictorial instructions for meal preparation.
Fascinatingly, the most ancient recipe found, according to experts is a series of ancient tablets in Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel `wonderful`. As we move into The time of the roman empire 25BC a roman called Apicius compiled a few documents which described recipes enjoyed by wealthy Romans. In his works, he recounts how the meals were separated into hors d`oeuvres, entrees and desserts, a very modern way of dining. He also recounts how the cooks of Roman times made use of many herbs, including a few that will be familiar to modern cooks such as bay, mint and asafoetida. As our culinary historical trip moves to more modern times there were a couple of interesting cookery books which were published in the 14th Century ; a recipe book called `Forme of Cury`, and another titled `Curye on Inglish`. The titles are somewhat misleading tho`, these books are nothing to do with the indian curry that we all know today, but rather accounts of the types of meals prepared for the rich people of the time. In the 15th century, people returning from the crusades brought us many new foods and herbs from the Middle-East, including rosemary and coriander. These new foods and tastes caused an outbreak in recipe books, the majority of which still exist in private cookery archives. The introduction of television brings us celebrity chefs and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the invention of the internet, allowing everybody to search through thousands of recipes like the ones you can find on the site you are now reading. |
