The History of Recipes
Transcribed cooking instructions as an idea can be traced back into distant history, in fact as far as ancient Egypt, and possibly even further than that. In practice though, mostly, these old cook books were just very simple hieroglyphic recipes for food preparation.
In an interesting twist, the oldest recipe in existence, according to historians is a series of ancient tablets in the Sumerian language which describe the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel wonderful. Later on, in The time of the romans 25BC a man called Apicius assembled a collection of scripts detailing recipes cooked by wealthy Romans. In his works, he describes how the meals were separated into starters, entrees and desserts, a style of dining still practiced today. Aspicius describes how the cooks of his times were skilled in the use of a good variety of herbs, including a few that will be familiar to modern chefs such as basil, rue and parsley. Later on, in the 15th century, the Crusaders brought back many spices and herbs from Arab cooking, including coriander, parsley, and basil. These new foods and tastes was responsible for a surge in books on cookery, many of which are now in private cookery archives. Over the succeeding few centuries, the powerful families of the West competed to serve up the most exotic banquets, and as a consequence, the best cooks and their recipes were greatly in demand. However, it was during the 1800s that fine cooking and recipe collections rose to prominence. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted much of their lives to collecting, verifying, and publishing popular recipes of the day. When we get to the 20th century, recipe books are in great demand, mostly due to more people being able to read, people having more leisure time and having more money. The TV revolution brought us TV cookery programs and the accompanying recipe books. And that brings us to the present day and the internet revolution, allowing everyone to access massive numbers of recipes such as those found on the site you are now reading. |
