The History of Recipes
We are able to trace the history of written recipes way back into the distant past, in fact as far back into recorded history as the Egypt of the Pharoahs, and potentially, even further back. Interesting though that is, in the main part, these old records were just very simple pictorial recipes for preparing food.
As we move into The time of the romans 25BC a roman called Apicius wrote a number of scripts showing how to cook the recipes prepared by the Romans. In his works, Apicius recounts how the meals of wealthy Romans were separated into hors d`oeuvre, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef informs us how the cooks of his times were skilled in the use of many different spices, including a few that are still present in modern kitchens like basil, rue and dill. During the succeeding few centuries, the powerful and rich houses strove to lay on the most exotic banquets, and as a consequence, the best chefs and their collection of recipes were greatly in demand. However, it wasn`t until the 1800s that haute cuisine and recipe publications really came of age. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, spent years to collating, testing, and recording recipes to help cooks of their time. Like it or not, the introduction of TV gave us celebrity TV chefs and the accompanying recipe books. Which brings us neatly up to date and the invention of the internet, allowing everyone to access massive numbers of recipes like those on this web site. |
