The History of Recipes
Academics have traced the existence of recipes far back into antiquity, in fact as far into history as pharonic Egypt, and possibly even further than that. In practice though, sadly, these old records were just primitive pictorial, hieroglyphic or cunieform instructions for food preparation.
Later on, in The time of the roman empire 25BC a roman called Apicius compiled a collection of scripts detailing recipes enjoyed by his fellow Romans. In his works, Apicius tells us how the meals of wealthy Romans were split into hors d`oeuvre, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius tells us how the ancient Romans were skilled in the use of many aromatic flavours, including some familiar names like basil, fennel and asafoetida. Later, in the fifteenth century, knights returning from the crusades brought back a variety of foods, spices and herbs from the holy land, including spices like rosemary and coriander. These new culinary innovations caused an increase in publications on food, some of which are now in private cookery archives. The arrival of television brings us TV cooks and the spin-off recipe books. And that brings us to the present day and the invention of computers and the internet, permitting everyone to access massive numbers of recipes like the ones you can find on our site. |
