The History of Recipes
We can trace the history of written recipes back into distant history, at least as far back into recorded history as pharonic Egypt, and potentially, even further back. However, generally, these ancient recipes were just very simple pictorial recipes for meal preparation.
Later on, in Roman times around 25BC a man called Apicius compiled a number of scripts describing recipes prepared by his fellow Romans. In his publication, he recounts how the meals were divided into hors d`oeuvre, entrees and dessert, a style of dining still practiced today. This early Roman chef recounts how the Roman cooks were skilled in the use of a good variety of aromatic flavours, including many that are still in use today such as bay, rue and asafoetida. For the next few years, the wealthy families of Wesstern Europe competed with each other to serve up the most extravagent banquests, and as a result the best chefs and their recipes became highly prized. Nevertheless, it wasn`t until the 1800s that fine cookery and recipe collections reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted much of their lives to collecting, trying out, and recording popular recipes of the day. By the advent of the twentieth century, recipe publications are in great demand, as a result of increased literacy, people having increased spare time and disposable income. |
