The History of Recipes
It is quite possible to trace the history of written cooking instructions back into antiquity, in fact as far back into history as the Egyptians, and possibly even further than that. In practice though, generally, these early cook books were just basic hieroglyphic or cunieform recipes for preparing meals.
As we move into The time of the roman empire 25BC a roman called Apicius assembled a collection of documents showing how to cook the recipes cooked by wealthy Romans. In his scrolls, Apicius recounts how the roman meals were split into starters, main meal and dessert, something that is very familiar to us today. Additionally, he informs us how the Roman chefs were skilled in the use of a good variety of spices, including a few that will be familiar to modern cooks such as basil, fennel and asafoetida. Over the following few hundred years, the upper-class families of Europe strove to serve up the most extravagent meals, and as a result chefs and their recipes were highly sought after. Nevertheless, it was during the 19th century that haute cuisine and recipe publications rose to prominence. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, devoted much of their lives to collecting, testing, and publishing popular recipes of the day. The introduction of television brings us TV chefs and the demand for the accompanying recipe books. Which pretty much brings us up to date and the invention of the internet, allowing us all to access massive numbers of recipes such as those found on this recipe site. |
