The History of Recipes
It is quite feasible to trace the history of transcribed cooking instructions back into history, at least as far as the Egyptians, and quite possibly further than that. However, generally, these old records were just very simple hieroglyphic or cunieform recipes for preparing food.
As we move into The time of the romans 25BC a man called Apicius compiled a few scripts describing recipes enjoyed by his fellow Romans. In his scrolls, Apicius recounts how the roman meals were split into appetizers, entrees and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also informs us how the chefs of Roman times used many different aromatic flavors, including a few that will be familiar to modern chefs for example bay, fennel and parsley. During the succeeding few centuries, the wealthy families of Wesstern Europe competed with each other to serve the best banquets, and because of this the best chefs and their collection of recipes were much in demand. Nevertheless, it was during the 1800s the formal cooking and recipe publications reached a high level of popularity. Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, devoted their lives to collating, trying out, and publishing recipes common in their social group. Like it or not, the introduction of TV brought us cooking programs and the spin-off recipe books. Which brings us neatly to the present day and the invention of the internet, allowing everybody to access thousands of recipes like those on sites such as this. |
