The History of Recipes
It is quite feasible to track the history of written cooking instructions far back into the distant past, in truth as far as ancient Egypt, and maybe further still. In practice though, generally, these early recipes were just simple pictorial recipes for preparing food.
The truth of the matter is, the most ancient recipe discovered, according to experts is a collection of tablets in ancient Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `wonderful`. As we move into Roman times around 25BC a roman called Apicius created a few documents which described recipes prepared by wealthy roman citizens. In his works, Apicius tells us how the meals of wealthy Romans were split into starters, entrees and desserts, a very modern way of dining. Aspicius also recounts how the ancient Romans were skilled in the use of a wide range of spices and herbs, including some that we all recognise such as thyme, fennel and asafoetida. Later, in the 15th century, people returning from the crusades brought us many new foods and herbs from the holy land, including parsley, basil and rosemary. These new culinary innovations was responsible for a surge in books on cookery, most of which are now in private cookery archives. Like it or not, the introduction of TV gave us celebrity chefs and the recipe books that accompanied them. Which pretty much brings us to the present day and the invention of the internet, permitting everyone to access massive numbers of recipes just like those on this site. |
