The History of Recipes
It is quite feasible to track the history of written cooking instructions back into ancient history, in fact as far as ancient Egypt, and maybe even further. In practice though, mostly, these early cookbooks were just simple hieroglyphic instructions for food preparation.
The truth of the matter is, the most ancient recipe discovered, according to experts in ancient history are some tablets in ancient Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel exhilarated. As we move into Roman times around 25BC a man called Apicius created a number of scripts showing how to cook the recipes prepared by wealthy Romans. In his works, he tells us how the roman meals were separated into hors d`oeuvre, entrees and desserts, a style of dining still practiced today. Aspicius also recounts how the cooks of Roman times made use of many different spices and herbs, including a few that will be familiar to modern chefs such as bay, fennel and dill. For the next few years, the powerful families of the West strove to serve the most exotic banquets, and consequentially cooks and their recipe collections became highly prized. Nevertheless, it wasn`t until the 1800s that fine cooking and recipe collections really came of age. Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, dedicated years of their lives to assembling, testing, and publishing popular recipes of the day. The introduction of the TV brought us TV chefs and the accompanying recipe books. Which pretty much brings us to the present day and the invention of the internet, allowing everybody to search through thousands of recipes like those on this recipe site. |
