Ingredients
1 egg
1/2 cup milk
1/4 cup vegetable oil
1/2 cup applesauce
1 1/2 cup flour
1/2 cup sugar
2 tsp baking powder
1/2 tsp cinnamon
1/2 tsp salt

Beat egg; stir in milk, oil, and applesauce.Mix in remaining
ingredients just until flour is moistened. Batter should be lumpy.
Grease muffin cups or line with paper baking cups; fill 2/3 full. Mix
together 1/2 tsp. cinnamon and 2 Tbsp. sugar. Sprinkle on top of
muffins. Bake in 400-degree oven for 20 to 25 minutes. Serve warm
with fruit preserves.

The History of Recipes
Written cooking instructions as an idea can be observed far back into history, in truth as far into history as ancient Egypt, and possibly even further than that. Having said that, mostly, these ancient recipes were just very basic hieroglyphic recipes for meal preparation.
In an interesting twist, the most ancient recipe found, according to academics are some tablets in the Sumerian language describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel exhilarated and blissful. Progressing into Roman times 25BC a roman called Apicius wrote a number of scripts which described recipes cooked by wealthy roman citizens. In his publication, he recounts how the meals of wealthy Romans were separated into appetizers, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also recounts how the Roman cooks used a wide range of aromatic flavours, including many that are still in use today such as thyme, rue and asafoetida. Continuing our culinary historical journey, we find two interesting recipe books which appeared in the 14th Century : a cookery book titled `Forme of Cury`, and another called `Curye on Inglish`. Don`t be fooled by the titles though, these two books are nothing to do with the indian food that is served today, but rather recipes for the types of food on the menues of the rich and wealthy people of that period. Later on, in the 15th century, people returning from the crusades brought back many new foods and herbs from the East, such as parsley, basil and rosemary. The introduction of these new foods and spices created a surge in recipe publications, the majority of which are now in private collections. Over the succeeding few hundred years, the powerful and rich houses tried to offer the most exotic meals, and as a result cooks and their collection of recipes were at a premium. Notwithstanding that, it was during the 1800s that haute cuisine and cookery books became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated their lives to assembling, trying out, and recording the recipes that were being prepared for the better households. When we get to the twentieth century, cook books were starting to become popular mostly as a result of increased literacy, more free time and having more disposable income. The TV revolution gave us celebrity TV chefs and the recipe books that accompanied them. And that neatly brings us to the present day and the internet revolution, permitting everyone to search through thousands of recipes just like those on sites such as the one you are reading now. |
