Ajad (Fresh Cucumber Pickle) Recipe


Ingredients

4 tbsp rice vinegar
2 tsp sugar
1/2 tsp salt
1 oz cucumber, finely chopped
2 small shallots, finely chopped
1 small carrot, finely chopped
1 small red or green chili - finely chopped


Directions

Mix all ingredients in a small bowl, stirring well until thoroughly
mixed and serve.

The History of Recipes

It is possible to read the history of `recipes` back into history, at least as far as pharonic Egypt, and possibly even further. In practice though, in the main part, these ancient recipes were just basic pictorial, hieroglyphic or cunieform recipes for meal preparation.

Later, in the fifteenth century, the Crusaders brought back many foods and spices from the holy lands, such as parsley and basil. The introduction of these new tastes led to a torrent in cookery books, many of which are kept safe in private collections.

For the decades that followed, the wealthy families of the West competed with each other to serve the most extravagent banquests, and consequentially cooks and their recipe collections could command a high salary. Notwithstanding that, it was during the nineteenth century the formal cooking and recipe collections reached a high level of popularity. Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, devoted their lives to collecting, trying out, and writing down the recipes that were being prepared for the better households.

The arrival of television brought us cooking programs and the demand for the spin-off recipe books.

Which brings us neatly to the present day and the invention of computers and the internet, allowing everyone to access thousands of recipes such as those found on sites such as the one you are reading now.
