Ingredients
20 chiles, aji, yellow, chopped substitue yellow
1/4 cup oil, olive
1 garlic clove, minced
2 tbsp vinegar
1 tsp salt
HEAT SCALE HOT
Directions
Remove seeds and stems. Combine all ingredient in a food processor
and puree to a fine paste. This is a HOT condiment.
This South American chile paste can be used as a substitute whenever
fresh chiles are called for. It will keep for two weeks or more in the
refrigerator. For longer storage, increase the vinegar and reduce the
amount of olive oil.

Written recipes as an idea can be observed far back into the far past, at least as far into history as ancient Egypt, and maybe further still. In practice though, generally, these early recipes were just simple pictorial, hieroglyphic or cunieform recipes for preparing meals.

Over the succeeding few hundred years, the families of Europe competed to offer the most exotic meals, and because of this the best cooks and their collection of recipes could command a high salary. Notwithstanding that, it wasn`t until the 1800s that cooking and recipe collections rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted their lives to collating, testing, and recording recipes common in their social group. The TV revolution gave us TV cookery programs and the recipe books that accompanied them. And that neatly brings us to the present day and the internet revolution, permitting everybody to access thousands of recipes like those on this web site. |
