The History of Recipes

Transcribed cooking instructions as an idea can be found back into ancient history, in truth as far as the early Egyptians, and maybe even further. Having said that, sadly, these old records were just very basic pictorial, hieroglyphic or cunieform recipes for food preparation.

The truth of the matter is, the most ancient recipe in existence, according to Professor Solomon Katz, are some tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel blissful and exhilarated.

As we move into The time of the romans around 25BC a roman called Apicius created some documents showing how to cook the recipes enjoyed by wealthy roman citizens. He describes how the meals of wealthy Romans were split into starters, entrees and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he tells us how the cooks of Roman times made use of a good variety of herbs, including some that we all recognise like bay, fennel and parsley.

As we move on, we find some books dating from the 14th Century - a recipe book titled `Forme of Cury`, and another titled `Curye on Inglish`. The titles are a little misleading though, they are nothing to do with the curry that is served today, but instead descriptions of the types of food on the tables of the rich people of that period.

Later, in the fifteenth century, people returning from the crusades brought back a variety of foods, spices and herbs from Arab countries, including coriander, parsley, and basil. The introduction of these new tastes was responsible for an outbreak in manuscripts on food, the majority of which are now in academic collections.

During the next few centuries, the powerful and rich strove to serve the best banquets, and as a consequence, the best cooks and their recipes were highly sought after. Notwithstanding that, it was during the 1800s that formal cookery and cookery books rose to prominence. Mrs Beeton in the UK, and Fannie Farmer in the US, dedicated the best years of their lives to collecting, verifying, and recording recipes to allow everyone to enjoy them.

By the advent of the 20th century, cookbooks are greatly in demand due to more people being able to read, more leisure time and being a little richer.

The revolution that is television gave us TV chefs and the spin-off recipe books.

Which pretty much brings us up to date and the invention of computers and the internet, allowing everybody to search through massive numbers of recipes such as those found on the site you are now reading.
