The History of Recipes
We can trace the history of written recipes back into antiquity, in fact as far back into recorded history as the Egypt of the Pharoahs, and maybe even further. Interesting though that maybe, in the main part, these old recipes were just basic hieroglyphic instructions for preparing food.
Interestingly, the most ancient recipe found, according to academics are some ancient tablets in the Sumerian language which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel `wonderful`. During Roman times around 25BC a man called Apicius created a number of scripts which described recipes cooked by the Romans. In his publication, he tells us how the meals of wealthy Romans were separated into appetizers, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius describes how the chefs of Roman times made use of many different spices, including a few you will know like thyme, fennel and parsley. As our culinary historical trip moves on a few more years we have two books from the 1300s : a cookery book titled `Forme of Cury`, and another named `Curye on Inglish`. Despite their titles, these two books are nothing to do with the indian food that is served today, but rather descriptions of the types of meals on the menus of the rich people of those days. In the fifteenth century, knights returning from the crusades brought us many new foods, spices and herbs from the East, such as parsley, basil and rosemary. The introduction of these new culinary ideas led to an outbreak in recipe publications, some of which are now in academic collections. During the succeeding few hundred years, the rich families of the West tried to offer the best banquets, and as a result cooks and their collection of recipes were much in demand. However, it was during the 1800s that haute cuisine and recipe publications rose to prominence. The Famous Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, dedicated years of their lives to assembling, testing, and writing down recipes to allow everyone to enjoy them. By the arrival of the 20th century, cooking publications were starting to become popular due to increased literacy, more spare time and having more disposable income. Like it or not, the introduction of television brings us celebrity TV chefs and the spin-off recipe books. And that brings us to the present day and the internet revolution, allowing everybody to search through massive numbers of recipes like those on this web site. |
