The History of Recipes
Transcribed cooking instructions as a concept can be observed way back into history, in fact as far into history as the Egypt of the Pharoahs, and maybe even further. Interesting though that is, these, old recipes were just very basic pictorial instructions for preparing food.
In an interesting twist, the oldest recipe in existence, according to experts are a few stone tablets in ancient Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel wonderful and blissful. Later on, in The time of the romans 25BC a roman called Apicius assembled a collection of documents describing recipes cooked by his fellow Romans. In his scrolls, he tells us how the roman meals were separated into appetizers, main meal and afters, something that is very familiar to us today. Aspicius also describes how the Romans made use of a wide range of spices, including many that are still in use today like basil, mint and asafoetida. Continuing our culinary historical journey, we have a couple of interesting recipe books from the fourteenth century ; a recipe book published under the title `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Perhaps surprisingly, these two books have no connection with the curry that appears on menues today, but instead recipes for the types of meals prepared by the cooks of the upper classes of those days. Later on, in the 15th century, knights returning from the crusades brought back many foods, spices and herbs from Arab countries, including spices like basil and coriander. These new foods and spices led to an explosion in manuscripts on cooking, some of which are kept safe in private libraries. Over the succeeding few centuries, the upper-class families of Europe competed with each other to lay on the best banquets, and as a consequence, the best chefs and their recipe collections became highly prized. Nevertheless, it was during the 19th century that formal cookery and recipe publications reached a high level of popularity. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated years of their lives to assembling, testing, and recording recipes to allow everyone to enjoy them. When we get to the 20th century, cooking books are in high demand, due to more people being able to read, people having increased leisure time and disposable income. The TV revolution brings us cooking programs and the spin-off recipe books. Which brings us neatly to the present day and the invention of computers and the internet, permitting everybody to search through massive numbers of recipes just like those on this web site. |
