The History of Recipes
We are able to read the history of meal recipes way back into ancient history, in fact as far as pharonic Egypt, and potentially, even further back. In practice though, these, old recipes were just primitive hieroglyphic or cunieform instructions for meal preparation.
The truth of the matter is, the most ancient recipe discovered, according to Professor Solomon Katz, are a few tablets in ancient Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel blissful. As we move into The time of the romans around 25BC a man called Apicius compiled some scripts showing how to cook the recipes prepared by the Romans. In his publication, he tells us how the meals of wealthy Romans were separated into hors d`oeuvre, main course and dessert, something that is very familiar to us today. Additionally, he describes how the chefs of Roman times were skilled in the use of a wide range of herbs, including a few that will be familiar to modern cooks for example bay, rue and dill. Later, in the fifteenth century, people returning from the crusades brought us many new foods and spices from Arab cuisine, such as coriander, parsley, and basil. The introduction of these new tastes led to a torrent in books on cooking, many of which are kept safe in academic collections. During the next few centuries, the rich and powerful families of the West strove to lay on the most extravagent banquests, and because of this cooks and their recipes could command a high salary. Notwithstanding that, it was during the nineteenth century the formal cooking and recipe collections reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted much of their lives to assembling, testing, and writing down the recipes that were being prepared for the better households. The revolution that is television gave us celebrity TV chefs and the demand for the spin-off recipe books. Which brings us neatly to the present day and the internet revolution, permitting everyone to access massive numbers of recipes just like those on this site. |
