The History of Recipes
It is quite possible to follow the history of transcribed cooking instructions back into history, in truth as far as the ancient Egyptians, and maybe even further. Having said that, these, ancient cook books were just very simple hieroglyphic or cunieform recipes for meal preparation.
In fact, the most ancient recipe in existence, according to experts are some stone tablets in ancient Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `exhilarated, wonderful and blissful`. Progressing into Roman times around 25BC a man called Apicius compiled a few documents which described recipes prepared by wealthy roman citizens. In his publication, Apicius tells us how the roman meals were split into starters, main meal and afters, a style of dining still practiced today. He also recounts how the Roman chefs made use of many aromatic flavours, including a few that will be familiar to modern cooks like basil, rue and parsley. Later on, there are two interesting cookery books which date from the 1300s ; a recipe book titled `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Don`t be fooled by the titles though, they have no connection with the spicy food that is popular today, but instead accounts of the types of meals prepared by the chefs of the nobility of that period. Later on in the 1400s, the Crusaders brought back many new spices and herbs from Arab countries, including spices such as parsley and basil. These new culinary innovations was responsible for an explosion in manuscripts on cookery, many of which are kept safe in private cookery archives. By the advent of the twentieth century, recipe publications are increasing in popularity mostly due to more people being able to read, leisure time and disposable income. |
