Ingredients
5 1/2 lb apples, peeled
1 and finely chopped
4 cup sguar
3 tsp cinnamon
1/4 tsp ground cloves
1/4 tsp salt
Directions
Recipe by: Taste of Home Oct/Nov '96 Place apples in a slow cooker.
Combine sugar, cinnamon, cloves and salt; pour over apples and mix
well. Cover and cook on high for 1 hour. Reduce heat to low; cover
and cook for 9-11 hours or until thickened and dark brown, stirring
occasionally (stir more frequently as it thickens to prevent
sticking). Uncover and cook on low 1 hour longer. If desired, stir
with a wire whisk until smooth. Spoon into freezer containers,
leaving 1/2-inch headspace. Cover and refrigerate or freeze.

The History of Recipes
Historians have found proof that recipes existed way back into distant history, in truth as far as the Egyptians, and maybe even further. In practice though, sadly, these early records were just very simple hieroglyphic or cunieform recipes for food preparation.
Later on, in Roman times around 25BC a roman called Apicius compiled a number of documents showing how to cook the recipes enjoyed by the Romans. In his publication, Apicius recounts how the meals were separated into hors d`oeuvre, main course and desserts, a style of dining still practiced today. Additionally, he tells us how the ancient chefs used many different aromatic flavours, including a few you will know like thyme, rue and parsley. Later on in the 1400s, people returning from the crusades brought us a variety of foods and spices from the holy land, including spices such as parsley, basil and rosemary. These new culinary innovations prompted an increase in books on cookery, many of which are kept safe in private libraries. The introduction of the TV brings us TV chefs and the demand for the spin-off recipe books. Which pretty much brings us up to date and the invention of computers and the internet, permitting us all to search through thousands of recipes like those on sites such as the one you are reading now. |
