Ingredients
5 1/2 lb apples, peeled
1 and finely chopped
4 cup sguar
3 tsp cinnamon
1/4 tsp ground cloves
1/4 tsp salt
Directions
Recipe by: Taste of Home Oct/Nov '96 Place apples in a slow cooker.
Combine sugar, cinnamon, cloves and salt; pour over apples and mix
well. Cover and cook on high for 1 hour. Reduce heat to low; cover
and cook for 9-11 hours or until thickened and dark brown, stirring
occasionally (stir more frequently as it thickens to prevent
sticking). Uncover and cook on low 1 hour longer. If desired, stir
with a wire whisk until smooth. Spoon into freezer containers,
leaving 1/2-inch headspace. Cover and refrigerate or freeze.

The History of Recipes
We are able to follow the history of meal recipes way back into distant history, certainly as far back as early Egypt, and potentially, even further back. In practice though, mostly, these old cook books were just basic hieroglyphic recipes for food preparation.
The truth of the matter is, the oldest recipe discovered, according to Professor Solomon Katz, are a few tablets in ancient Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel wonderful and blissful. As we move on, there were two interesting books which appeared in the fourteenth century - one book published under the title `Forme of Cury`, and another called `Curye on Inglish`. Despite their titles, these books have no connection with the indian curry that appears on menues today, but instead accounts of the types of meals cooked for the rich and wealthy people of the time. During the following few hundred years, the upper-class families of the West competed with each other to serve the most extravagent meals, and consequentially the best chefs and their recipes were highly sought after. However, it wasn`t until the 19th century that cookery and recipe publications became popular. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated their lives to assembling, verifying, and writing down popular recipes of the day. The arrival of television brings us cooking programs and the demand for the accompanying recipe books. Which pretty much brings us up to date and the invention of the internet, allowing us all to search through thousands of recipes like those on our site. |
