Ingredients
5 1/2 lb apples, peeled
1 and finely chopped
4 cup sguar
3 tsp cinnamon
1/4 tsp ground cloves
1/4 tsp salt
Directions
Recipe by: Taste of Home Oct/Nov '96 Place apples in a slow cooker.
Combine sugar, cinnamon, cloves and salt; pour over apples and mix
well. Cover and cook on high for 1 hour. Reduce heat to low; cover
and cook for 9-11 hours or until thickened and dark brown, stirring
occasionally (stir more frequently as it thickens to prevent
sticking). Uncover and cook on low 1 hour longer. If desired, stir
with a wire whisk until smooth. Spoon into freezer containers,
leaving 1/2-inch headspace. Cover and refrigerate or freeze.

The History of Recipes
It is quite feasible to follow the history of transcribed cooking instructions back into antiquity, in fact as far as the ancient Egyptians, and potentially, even further back. Interesting though that is, these, ancient cook books were just primitive hieroglyphic instructions for preparing meals.
As we move into The time of the romans 25BC a man called Apicius assembled some documents showing how to cook the recipes prepared by wealthy roman citizens. In his works, he describes how the roman meals were separated into appetizers, entrees and afters, something we still use today. He also recounts how the Romans used many different herbs, including many that are still in use today such as thyme, mint and dill. During the next few hundred years, the powerful families of Europe strove to lay on the most exotic banquets, and because of this the best chefs and their recipes were greatly in demand. However, it was during the 1800s the formal cooking and recipe books reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, devoted their lives to assembling, verifying, and recording popular recipes of the day. Like it or not, the introduction of TV brought us celebrity TV chefs and the accompanying recipe books. And that neatly brings us to the present day and the internet revolution, permitting everyone to access thousands of recipes like those on the site you are now reading. |
