The History of Recipes
Transcribed cooking instructions as an idea can be tracked back into distant history, at least as far back into history as pharonic Egypt, and maybe further still. Interesting though that maybe, these, ancient records were just simple hieroglyphic instructions for preparing food.
Fascinatingly, the oldest recipe in existence, according to historians are some ancient tablets in the Sumerian language describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel wonderful. Moving our culinary historical trip onwards, there are some recipe books which were published in the 14th Century ; one book titled `Forme of Cury`, and another, similary called `Curye on Inglish`. Although the titles sound familiar, these have no connection with the indian food that is served today, but rather descriptions of the types of meals on the menus of the rich. In the 15th century, knights returning from the crusades brought us many foods and spices from Arab cooking, including rosemary and coriander. The introduction of these new herbs and spices prompted an explosion in recipe publications, the majority of which are now in academic collections. Over the following few centuries, the wealthy families of Europe competed with each other to offer the most extravagent meals, and as a consequence, the best cooks and their recipe collections were greatly in demand. Even so, it wasn`t until the 19th century that haute cuisine and cookery books rose to prominence. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, spent years to collating, trying out, and publishing recipes to help cooks of their time. The arrival of TV brought us TV cookery programs and the demand for the accompanying recipe books. Which brings us neatly up to date and the invention of the internet, permitting everyone to access massive numbers of recipes like those on sites such as this. |
