The History of Recipes
Written recipes as an idea can be found far back into the distant past, certainly as far as pharonic Egypt, and maybe further still. Interesting though that is, sadly, these old records were just very simple pictorial, hieroglyphic or cunieform instructions for food preparation.
In fact, the oldest recipe found, according to Professor Solomon Katz, is a series of stone tablets in ancient Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `exhilarated, wonderful and blissful`. Progressing into Roman times around 25BC a man called Apicius assembled a number of scripts describing recipes prepared by wealthy Romans. In his publication, he recounts how the meals of wealthy Romans were separated into appetizers, main course and desserts, a very modern way of dining. Aspicius informs us how the Romans were skilled in the use of a wide range of herbs, including a few that are still present in modern kitchens for example thyme, rue and asafoetida. Later on, there are some recipe books which appeared in the 14th Century ; a recipe book called `Forme of Cury`, and another, similary entitled `Curye on Inglish`. Don`t be fooled by the titles though, these two books are not about the indian curry that we all know today, but instead recipes for the types of meals enjoyed by the rich people of the period. Later on in the 1400s, the Crusaders brought back many foods and herbs from the East, such as basil and coriander. The introduction of these new foods and spices led to an increase in books on cookery, most of which are kept safe in private collections. For the next few years, the powerful families of Wesstern Europe competed with each other to offer the most extravagent meals, and as a result cooks and their recipe collections were highly sought after. Notwithstanding that, it was during the nineteenth century that fine cooking and recipe books became popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, spent years to assembling, verifying, and recording the recipes of their peers. By the advent of the twentieth century, recipe publications were in great demand, mostly as a result of increased literacy, people having more free time and being a little richer. The introduction of the TV brought us TV cookery programs and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the invention of the internet, permitting everyone to access massive numbers of recipes just like those on the site you are now reading. |
