The History of Recipes
It is quite possible to prove the history of transcribed cooking instructions way back into antiquity, certainly as far back as the Egypt of the Pharoahs, and maybe further still. In practice though, these, early cookbooks were just simple pictorial, hieroglyphic or cunieform instructions for meal preparation.
Interestingly, the oldest recipe discovered so far, according to academics is a series of tablets in the Sumerian language which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `wonderful`. As we move into The time of the romans 25BC a roman called Apicius compiled a few documents describing recipes cooked by wealthy roman citizens. In his publication, he tells us how the meals of wealthy Romans were split into appetizers, main course and desserts, something we still use today. Additionally, he describes how the early Romans used a wide range of herbs and spices, including a few that will be familiar to modern cooks such as bay, fennel and asafoetida. Later, in the 15th century, people returning from the crusades brought us many foods and spices from middle-east cuisine, including coriander, parsley, basil and rosemary. The introduction of these new tastes created an increase in books on cookery, many of which are kept safe in private cookery archives. Like it or not, the introduction of TV brings us cooking programs and the demand for the spin-off recipe books. Which pretty much brings us up to date and the internet revolution, permitting everybody to search through thousands of recipes just like those on our web site. |
