The History of Recipes
Written recipes as a concept can be tracked way back into distant history, at least as far back into recorded history as the Egyptians, and maybe even further. However, in the main part, these ancient cook books were just simple hieroglyphic or cunieform recipes for preparing meals.
Fascinatingly, the oldest recipe found, according to experts is a collection of tablets in ancient Sumerian describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel blissful and exhilarated. Progressing into The time of the roman empire around 25BC a roman called Apicius assembled a number of documents describing recipes prepared by the Romans. He describes how the meals of wealthy Romans were separated into starters, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also tells us how the Romans made use of many herbs, including a few that will be familiar to modern chefs such as thyme, rue and parsley. Over the following few centuries, the upper-class families of the West competed with each other to offer the best banquets, and as a result chefs and their collection of recipes became highly prized. Nevertheless, it was during the 1800s that haute cuisine and cookery books became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated years of their lives to collating, verifying, and publishing popular recipes of the day. The introduction of television brings us TV cookery programs and the spin-off recipe books. And that neatly brings us to the present day and the invention of computers and the internet, permitting everybody to search through massive numbers of recipes like the ones you can find on the site you are now reading. |
