The History of Recipes
Experts have traced the existence of recipes way back into the far past, at least as far as pharonic Egypt, and possibly even further than that. In practice though, these, early records were just basic pictorial instructions for food preparation.
Fascinatingly, the oldest recipe in existence, according to Professor Solomon Katz, is a collection of ancient tablets in Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel blissful. During the time of the Roman Empire a roman called Apicius assembled a collection of documents describing recipes enjoyed by wealthy Romans. In his publication, he tells us how the meals of wealthy Romans were split into starters, main course and afters, a style of dining still practiced today. Aspicius recounts how the ancient chefs were skilled in the use of many herbs, including a few that will be familiar to modern chefs like bay, mint and parsley. As our culinary historical trip moves on a few more years we have a couple of interesting books which were published in the 14th Century ; a recipe book entitled `Forme of Cury`, and another named `Curye on Inglish`. Despite their titles, they are not about the spicy food that is popular today, but instead descriptions of the types of meals prepared by the chefs of the rich and powerful of the period. In the fifteenth century, knights returning from the crusades brought back many foods and spices from Arab cooking, such as basil and coriander. The introduction of these new tastes was responsible for a torrent in manuscripts on cookery, many of which are kept safe in academic collections. The introduction of television brings us cooking programs and the demand for the accompanying recipe books. And that pretty much brings us to the present day and the internet revolution, permitting us all to access thousands of recipes like the ones you can find on this web site. |
We hope you enjoy this Aloha Salad recipe.
