The History of Recipes
Transcribed cooking instructions as a concept can be observed back into the far past, in truth as far into history as the ancient Egyptians, and maybe even further. Interesting though that maybe, sadly, these old records were just simple hieroglyphic recipes for preparing food.
In an interesting twist, the most ancient recipe in existence, according to historians is a collection of ancient tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `blissful`. Much later, in Roman times a man called Apicius created a number of documents which described recipes cooked by wealthy Romans. In his works, Apicius recounts how the meals were separated into hors d`oeuvres, main course and dessert, something we still use today. He also informs us how the ancient Romans were skilled in the use of a good variety of herbs, including a few that will be familiar to modern chefs such as bay, fennel and asafoetida. Later on, in the 15th century, knights returning from the crusades brought us many new spices and herbs from Arab cooking, including spices such as parsley, basil and rosemary. These new spices and herbs created an increase in publications on food, most of which are kept safe in academic collections. When we get to the twentieth century, cooking publications are starting to become popular mostly due to more people being able to read, leisure time and having more money. The TV revolution brings us celebrity TV chefs and the recipe books that accompanied them. And that pretty much brings us to the present day and the invention of the internet, permitting everyone to access massive numbers of recipes such as those found on this web site. |
