Ingredients
1/2 cup butter
2 tbsp molasses
2 each eggs
1 cup ground toasted almonds
1/2 tsp grated lemon rind
1 tsp almond extract
1/2 cup amaretto
2 cup whole wheat pastry flour
Directions
Cream together butter and molasses. Add eggs, ground almonds, lemon
rind and almond extract; mix well. Stir in Amaretto alternately with
flour. Drop by teaspoonsful onto unoiled cookie sheets. Bake at 350
degrees for 12-15 minutes. Cookies will be golden brown when done.

The History of Recipes
It is possible to trace the history of `recipes` back into the far past, certainly as far into history as pharonic Egypt, and maybe even further. Having said that, these, old cookbooks were just very basic pictorial recipes for food preparation.
The truth of the matter is, the oldest recipe discovered so far, according to Professor Solomon Katz, is a series of ancient tablets in ancient Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel blissful and exhilarated. During Roman times around 25BC a roman called Apicius created a few documents showing how to cook the recipes prepared by wealthy Romans. In his works, Apicius recounts how the roman meals were separated into appetizers, entrees and desserts, something that is very familiar to us today. He also recounts how the chefs of Roman times used a good variety of spices, including some that we all recognise such as basil, fennel and asafoetida. As our culinary historical trip moves on a few more years we find two books dating from the 1300s : a book entitled `Forme of Cury`, and another titled `Curye on Inglish`. Amusingly, these two books have no connection with the indian curry that appears on menues today, but instead descriptions of the types of food on the menues of the upper classes of the time. In the fifteenth century, people returning from the crusades brought us many new spices and herbs from the holy lands, including spices such as coriander, parsley, basil and rosemary. These new spices and herbs created an outbreak in recipe books, some of which are now in academic collections. By the arrival of the 1900s, cookbooks were starting to become popular mostly due to better eduction, leisure time and a general increase in wealth. Like it or not, the introduction of television gave us celebrity TV chefs and the accompanying recipe books. And that neatly brings us to the present day and the invention of the internet, allowing everyone to search through thousands of recipes such as those found on this web site. |
