The History of Recipes
It is possible to follow the history of written recipes back into antiquity, at least as far into history as the early Egyptians, and potentially, even further back. In practice though, mostly, these ancient cook books were just very simple hieroglyphic recipes for food preparation.
In fact, the oldest recipe in existence, according to historians are a few stone tablets in the Sumerian language which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel exhilarated and blissful. Progressing into The time of the roman empire 25BC a man called Apicius compiled a collection of documents detailing recipes cooked by the Romans. He describes how the meals were divided into hors d`oeuvres, main course and dessert, a style of dining still practiced today. He also tells us how the cooks of his times were skilled in the use of a wide range of herbs and spices, including a few that will be familiar to modern cooks for example bay, fennel and parsley. Later on, there are some recipe books dating from the fourteenth century ; one book published under the title `Forme of Cury`, and another named `Curye on Inglish`. The titles are a little misleading though, these books are not about the indian food that is popular today, but instead descriptions of the types of meals on the menus of the rich and powerful of that time. Later on in the 1400s, the Crusaders brought back many foods, spices and herbs from Arab countries, including spices like rosemary and coriander. The introduction of these new tastes caused an increase in recipe publications, many of which are now in academic collections. For the centuries that followed, the powerful families of Europe competed to offer the best banquets, and as a consequence, the best chefs and their recipe collections were much in demand. Notwithstanding that, it wasn`t until the nineteenth century that haute cuisine and recipe collections rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, spent years to assembling, verifying, and publishing the recipes of their peers. By the time we get to the 20th century, cooking books were in great demand, due to more people being able to read, people having increased leisure time and having more money. The introduction of the TV brought us TV cookery programs and the spin-off recipe books. And that neatly brings us to the present day and the invention of computers and the internet, allowing everyone to access massive numbers of recipes just like those on our web site. |
