The History of Recipes
Recipes as a concept can be traced way back into distant history, in fact as far back into history as the Egyptians, and possibly even further than that. Having said that, in the main part, these old records were just basic hieroglyphic recipes for food preparation.
In an interesting twist, the most ancient recipe discovered, according to academics are a few tablets in Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel wonderful and blissful. Progressing into Roman times 25BC a roman called Apicius compiled a collection of documents showing how to cook the recipes enjoyed by the Romans. In his publication, Apicius recounts how the meals of wealthy Romans were separated into starters, main course and afters, a style of dining still practiced today. Aspicius informs us how the Roman cooks were skilled in the use of a good variety of herbs, including a few that will be familiar to modern chefs such as basil, fennel and parsley. Continuing our culinary historical journey, there were some books from the 14th Century : a cookery book published under the title `Forme of Cury`, and another titled `Curye on Inglish`. Don`t be fooled by the titles though, they are not about the curry that is popular today, but instead descriptions of the types of food eaten by the rich people of the time. Later on, in the 15th century, knights returning from the crusades brought back a variety of foods, spices and herbs from the holy land, such as basil and rosemary. The introduction of these new foods and spices was responsible for a torrent in manuscripts on food, many of which are kept safe in academic collections. When we get to the twentieth century, cookery publications were greatly in demand due to better eduction, people having more free time and having more disposable income. The TV revolution brings us TV chefs and the spin-off recipe books. And that pretty much brings us to the present day and the invention of the internet, permitting us all to access massive numbers of recipes such as those found on the site you are now reading. |
