The History of Recipes
It is possible to read the history of written recipes far back into distant history, in fact as far into history as pharonic Egypt, and maybe even further. Interesting though that is, mostly, these ancient cookbooks were just simple pictorial recipes for preparing food.
Much later, in Roman times a roman called Apicius created some scripts showing how to cook the recipes cooked by his fellow Romans. In his works, he describes how the meals were separated into hors d`oeuvre, main meal and desserts, a very modern way of dining. Aspicius describes how the Roman cooks were skilled in the use of many herbs, including some that we all recognise such as basil, mint and dill. Over the succeeding few hundred years, the powerful and rich strove to offer the most exotic meals, and as a result cooks and their recipe collections were highly sought after. However, it wasn`t until the 19th century that fine cooking and recipe books became popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, devoted much of their lives to collating, verifying, and recording popular recipes of the day. When we get to the twentieth century, cookbooks are greatly in demand mostly as a result of increased literacy, more free time and being a little richer. |
