Ingredients
1/2 cup butter
2 tbsp molasses
2 eggs
1 cup almonds, ground toasted
1/2 tsp lemon rind, grated
1 tsp almond extract
1/2 cup amaretto liqueur
2 cup pastry flour, whole wheat
Directions
Cream together butter and molasses. Add eggs, ground almonds, lemon
rind and almond extract; mix well. Stir in Amaretto alternately with
flour. Drop by teaspoonsful onto unoiled cookie sheets. Bake at 350
degrees for 12-15 minutes. Cookies will be golden brown when done.

The History of Recipes
We can trace the history of written recipes back into history, in fact as far into history as pharonic Egypt, and possibly even further than that. Having said that, in the main part, these ancient cookbooks were just primitive pictorial instructions for food preparation.
In fact, the most ancient recipe discovered so far, according to Professor Solomon Katz, are some ancient tablets in the Sumerian language which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `blissful`. Later on, in Roman times around 25BC a man called Apicius compiled a few scripts showing how to cook the recipes enjoyed by his fellow Romans. In his scrolls, he tells us how the roman meals were separated into appetizers, entrees and desserts, a very modern way of dining. This early Roman chef describes how the cooks of Roman times made use of a wide range of aromatic flavors, including some familiar names like bay, fennel and dill. Later on, there are some books which were published in the 14th Century : one book titled `Forme of Cury`, and another named `Curye on Inglish`. Perhaps surprisingly, these two books have no connection with the indian curry that we all know today, but rather recipes for the types of meals cooked for the upper classes of the time. Later on in the 1400s, knights returning from the crusades brought us a variety of foods and spices from middle-east cuisine, such as basil and rosemary. These new foods and spices led to an outbreak in books on cookery, most of which are now in private collections. By the advent of the twentieth century, recipe publications are greatly in demand as a result of higher levels of literacy, people having more free time and being a little richer. The introduction of the TV brought us TV chefs and the demand for the accompanying recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, allowing everybody to search through massive numbers of recipes just like those on sites such as this. |
