The History of Recipes
Recipes as a concept can be observed far back into the far past, at least as far back into history as early Egypt, and quite possibly further than that. Interesting though that is, in the main part, these ancient records were just simple pictorial, hieroglyphic or cunieform instructions for meal preparation.
Fascinatingly, the oldest recipe in existence, according to experts is a series of stone tablets in the Sumerian language which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `wonderful`. Progressing into The time of the roman empire around 25BC a roman called Apicius created a number of documents describing recipes prepared by wealthy roman citizens. In his scrolls, he recounts how the meals were divided into starters, entrees and dessert, something we still use today. Additionally, he describes how the ancient cooks made use of a good variety of herbs, including some that we all recognise like thyme, fennel and asafoetida. As our culinary historical trip moves to more modern times we find some recipe books which appeared in the fourteenth century - a recipe book called `Forme of Cury`, and another named `Curye on Inglish`. The titles are somewhat misleading tho`, they have no connection with the indian food that is familiar to us all today, but instead descriptions of the types of food cooked for the rich people of the time. In the 15th century, people returning from the crusades brought us many foods and herbs from Arab cooking, including coriander, basil and rosemary. These new foods and tastes led to an outbreak in recipe manuscripts, many of which are kept safe in private collections. Over the following few centuries, the families of Europe competed with each other to offer the most extravagent meals, and as a consequence, the best cooks and their recipes became highly prized. However, it was during the 1800s that fine cookery and recipe collections reached a high level of popularity. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, dedicated the best years of their lives to collecting, verifying, and writing down recipes that were common in the better off homes of the day. When we get to the 1900s, cookbooks were in great demand, mostly as a result of more people being able to read, more leisure time and disposable income. |
