The History of Recipes
It is quite possible to prove the history of transcribed cooking instructions back into the far past, in fact as far back as pharonic Egypt, and maybe further still. Having said that, sadly, these early records were just very simple pictorial recipes for meal preparation.
In an interesting twist, the oldest recipe discovered so far, according to academics is a series of ancient tablets in Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel blissful. Later on, in The time of the romans 25BC a man called Apicius compiled some documents describing recipes enjoyed by his fellow Romans. In his works, Apicius recounts how the meals were separated into hors d`oeuvre, main course and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also tells us how the Roman cooks made use of a good variety of herbs and spices, including a few you will know such as bay, mint and asafoetida. Later on, in the 15th century, knights returning from the crusades brought us many foods and spices from middle-east cuisine, including coriander, parsley, basil and rosemary. These new spices and herbs caused an increase in books on cooking, the majority of which still exist in private libraries. Over the succeeding few centuries, the wealthy families of Europe competed with each other to serve the most extravagent banquests, and because of this the best cooks and their collection of recipes were at a premium. Even so, it wasn`t until the nineteenth century that fine cooking and cookery books really came of age. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated the best years of their lives to collecting, verifying, and publishing the recipes that were being prepared for the better households. The TV revolution brought us cooking programs and the demand for the spin-off recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, permitting us all to search through massive numbers of recipes such as those found on our web site. |
