The History of Recipes
We are able to track the history of meal recipes way back into distant history, certainly as far as pharonic Egypt, and maybe further still. Interesting though that is, these, early cookbooks were just simple pictorial instructions for preparing meals.
Later on, in The time of the roman empire around 25BC a roman called Apicius assembled a few documents detailing recipes prepared by the Romans. In his scrolls, he recounts how the meals of wealthy Romans were divided into hors d`oeuvres, main meal and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef tells us how the cooks of his times were skilled in the use of many different herbs, including a few that will be familiar to modern cooks such as bay, fennel and asafoetida. During the following few hundred years, the upper-class families of Wesstern Europe competed to lay on the most extravagent banquests, and as a result the best cooks and their collection of recipes were highly sought after. However, it wasn`t until the 19th century that cooking and cookery books rose to prominence. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted much of their lives to collating, verifying, and publishing the recipes that were being prepared for the better households. By the time we get to the 1900s, cookery publications were highly popular as a result of increased literacy, people having more leisure time and being a little richer. |
