The History of Recipes

Written cooking instructions as a concept can be tracked way back into the distant past, certainly as far as early Egypt, and quite possibly further than that. However, sadly, these old recipes were just simple hieroglyphic or cunieform instructions for meal preparation.

In fact, the most ancient recipe discovered so far, according to experts in ancient history is a series of tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel `wonderful`.

Later on, in Roman times around 25BC a roman called Apicius compiled a collection of scripts which described recipes cooked by his fellow Romans. In his scrolls, he tells us how the meals of wealthy Romans were split into hors d`oeuvres, main meal and desserts, something that is very familiar to us today. He also informs us how the ancient Romans used a wide range of herbs and spices, including a few you will know such as bay, rue and parsley.

For the next few years, the rich and powerful families of Europe tried to offer the most extravagent banquests, and because of this cooks and their recipes increased in prestige. However, it wasn`t until the 19th century that fine cooking and recipe publications reached a high level of popularity. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, devoted their lives to assembling, verifying, and writing down the recipes that were being prepared for the better households.

By the advent of the twentieth century, cookery publications are starting to become popular as a result of higher levels of literacy, more free time and a general increase in wealth.
