The History of Recipes
Historians have proved the existance of recipes way back into the far past, in truth as far into history as early Egypt, and possibly even further. Interesting though that is, generally, these old records were just very simple pictorial, hieroglyphic or cunieform instructions for meal preparation.
As we move into Roman times 25BC a man called Apicius compiled a few scripts showing how to cook the recipes enjoyed by wealthy Romans. In his scrolls, he describes how the meals of wealthy Romans were split into appetizers, entrees and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius describes how the Romans were skilled in the use of many different aromatic flavors, including a few that will be familiar to modern chefs like thyme, rue and asafoetida. Later, in the fifteenth century, the Crusaders brought back a variety of foods and spices from Arab cuisine, such as basil and coriander. These new herbs and spices led to an outbreak in manuscripts on cookery, the majority of which are now in private collections. By the advent of the 20th century, recipe publications are greatly in demand as a result of higher levels of literacy, more free time and having more money. |
