The History of Recipes
It is possible to track the history of `recipes` way back into ancient history, certainly as far back into recorded history as the early Egyptians, and quite possibly further than that. Interesting though that is, mostly, these early records were just basic pictorial instructions for preparing meals.
As we move into The time of the roman empire 25BC a roman called Apicius created a collection of documents showing how to cook the recipes enjoyed by his fellow Romans. In his scrolls, he describes how the roman meals were split into starters, main course and desserts, a very modern way of dining. Aspicius also informs us how the Roman chefs used a good variety of aromatic flavors, including a few you will know for example basil, rue and asafoetida. Over the next few centuries, the rich and powerful families of the West strove to serve up the most extravagent banquests, and as a consequence, cooks and their collection of recipes were much in demand. Even so, it was during the nineteenth century that fine cooking and recipe books reached a high level of popularity. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, devoted their lives to collecting, trying out, and publishing the recipes of their peers. By the arrival of the twentieth century, cookery books are greatly in demand as a result of more people being able to read, more free time and having more money. |
