The History of Recipes
Experts have proved the existance of recipes way back into the distant past, certainly as far into history as the ancient Egyptians, and maybe even further. Interesting though that maybe, generally, these ancient cookbooks were just very basic hieroglyphic instructions for preparing meals.
In an interesting twist, the most ancient recipe discovered, according to Professor Solomon Katz, are a few clay tablets in the Sumerian language which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel blissful. Later on, in The time of the romans 25BC a roman called Apicius wrote some scripts which described recipes enjoyed by wealthy Romans. In his publication, Apicius describes how the meals of wealthy Romans were separated into hors d`oeuvre, entrees and afters, something that is very familiar to us today. Aspicius also describes how the Roman cooks made use of many different herbs and spices, including a few that are still present in modern kitchens like thyme, mint and parsley. Later on, in the 15th century, people returning from the crusades brought back many new spices and herbs from the holy land, including coriander, parsley, basil and rosemary. The introduction of these new tastes caused a surge in manuscripts on cookery, some of which still exist in private cookery archives. Over the succeeding few centuries, the powerful and wealthy houses tried to serve the most exotic banquets, and consequentially the best cooks and their collection of recipes were highly sought after. Notwithstanding that, it wasn`t until the 1800s that cooking and recipe publications became really popular. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated the best years of their lives to collating, verifying, and recording recipes to allow everyone to enjoy them. When we get to the 20th century, cook books are increasing in popularity mostly due to better eduction, more leisure time and being a little richer. The TV revolution gave us celebrity chefs and the accompanying recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, permitting us all to search through massive numbers of recipes like those on our web site. |
