The History of Recipes
It is quite possible to track the history of written cooking instructions far back into the distant past, in truth as far into history as the ancient Egyptians, and possibly even further. However, generally, these ancient cook books were just basic pictorial, hieroglyphic or cunieform recipes for food preparation.
The truth of the matter is, the most ancient recipe discovered so far, according to food historians are some tablets in the Sumerian language which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel exhilarated and blissful. Later on, in The time of the roman empire 25BC a man called Apicius created a number of documents which described recipes cooked by wealthy Romans. In his scrolls, Apicius describes how the meals of wealthy Romans were separated into starters, entrees and desserts, something we still use today. Aspicius recounts how the early Romans made use of a wide range of spices and herbs, including many that are still in use today such as basil, mint and dill. Later, in the fifteenth century, knights returning from the crusades brought us many new spices and herbs from middle-east cuisine, including spices such as parsley and basil. The introduction of these new tastes was responsible for a surge in books on cookery, many of which still exist in private cookery archives. During the following few hundred years, the rich families of Wesstern Europe tried to serve up the most exotic banquets, and because of this chefs and their recipe collections could command a high salary. Notwithstanding that, it was during the 1800s that fine cooking and recipe collections became really popular. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated years of their lives to assembling, testing, and recording recipes for their fellow cooks to enjoy. By the time we get to the 1900s, cooking publications were starting to become popular mostly due to higher levels of literacy, leisure time and having more money to spend. The arrival of television brings us celebrity TV chefs and the accompanying recipe books. And that brings us to the present day and the invention of the internet, permitting everybody to search through thousands of recipes just like those on this site. |
