Ingredients
5 qt que bueno precooked refried beans, prepared according
10 oz green chiles, diced
1 lb cheese, cheddar, monterey jack o
9 oz cheese, as above
1 tortilla chips, crisp
Directions
1. Combine refried beans and diced green chiles. Place 1 cup bean
mixture in oven-proof serving dish. Top with 1 ounce grated cheese.
2. Place under broil or in microwave over until cheese is melted.
Serve immediately with crisp tortilla chips. May be gaarnished with
sour cream, chopped green onions or sliced ripe olives, if desired.
Makes 21 appetizer servings. Each appetizer serves 2.
Note: The above ingredients may also be used for burrito filling. To
prepare, place 1 cup heated bean mixture in large warm flour
tortilla. Top with 1 ounce grated cheese. roll and fold envelope
style. Serve. Makes 21 burritos.

The History of Recipes
Transcribed cooking instructions as a concept can be observed back into the far past, in truth as far back as pharonic Egypt, and possibly even further. Having said that, in the main part, these early cookbooks were just primitive hieroglyphic or cunieform instructions for meal preparation.
In an interesting twist, the most ancient recipe discovered, according to experts is a series of ancient tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `wonderful`. Moving our culinary historical trip onwards, there were some interesting books from the 1300s - a cookery book entitled `Forme of Cury`, and another titled `Curye on Inglish`. Don`t be fooled by the titles though, these two books are unconnected to the curry that is popular today, but rather accounts of the types of food served to the upper classes of the time. Over the next few hundred years, the upper-class families of the West strove to offer the best banquets, and consequentially chefs and their recipes were much in demand. Notwithstanding that, it was during the nineteenth century that cooking and recipe collections really came of age. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated the best years of their lives to assembling, testing, and publishing the recipes of their peers. When we get to the 20th century, cookery publications were greatly in demand due to better eduction, more spare time and having more disposable income. The arrival of TV brings us TV chefs and the spin-off recipe books. And that pretty much brings us to the present day and the invention of the internet, permitting everybody to search through massive numbers of recipes just like those on this web site. |
