Ingredients
5 qt que bueno precooked refried beans, prepared according
10 oz green chiles, diced
1 lb cheese, cheddar, monterey jack o
9 oz cheese, as above
1 tortilla chips, crisp
Directions
1. Combine refried beans and diced green chiles. Place 1 cup bean
mixture in oven-proof serving dish. Top with 1 ounce grated cheese.
2. Place under broil or in microwave over until cheese is melted.
Serve immediately with crisp tortilla chips. May be gaarnished with
sour cream, chopped green onions or sliced ripe olives, if desired.
Makes 21 appetizer servings. Each appetizer serves 2.
Note: The above ingredients may also be used for burrito filling. To
prepare, place 1 cup heated bean mixture in large warm flour
tortilla. Top with 1 ounce grated cheese. roll and fold envelope
style. Serve. Makes 21 burritos.

The History of Recipes
Written recipes as a concept can be tracked far back into history, in truth as far back into history as early Egypt, and maybe further still. Interesting though that maybe, generally, these ancient cook books were just very simple hieroglyphic instructions for preparing meals.
In an interesting twist, the oldest recipe in existence, according to food historians are some stone tablets in the Sumerian language which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `exhilarated, wonderful and blissful`. During the time of the Romans a man called Apicius assembled some documents describing recipes cooked by his fellow Romans. In his scrolls, he describes how the roman meals were split into appetizers, main meal and afters, something we still use today. Additionally, he describes how the cooks of his times used a wide range of aromatic flavours, including some that we all recognise like thyme, mint and dill. Over the succeeding few centuries, the powerful families of Europe competed with each other to lay on the best banquets, and as a consequence, the best cooks and their recipe collections were at a premium. Even so, it was during the 19th century the formal cooking and recipe collections reached a high level of popularity. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated their lives to assembling, trying out, and writing down recipes that were common in the better off homes of the day. When we get to the 20th century, recipe publications were in high demand, due to more people being able to read, people having increased free time and having more money to spend. |
