The History of Recipes
We can read the history of meal recipes far back into the distant past, at least as far as the ancient Egyptians, and potentially, even further back. In practice though, these, ancient recipes were just primitive hieroglyphic recipes for preparing meals.
In fact, the oldest recipe found, according to historians is a collection of stone tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel exhilarated and blissful. Later on, in Roman times around 25BC a roman called Apicius created a few documents describing recipes enjoyed by wealthy roman citizens. In his works, he tells us how the roman meals were split into hors d`oeuvre, main meal and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Additionally, he describes how the early Romans made use of many aromatic flavours, including a few that are still present in modern kitchens like bay, rue and asafoetida. For the next few years, the upper classes competed with each other to serve up the most exotic banquets, and as a result the best chefs and their recipes were greatly in demand. However, it wasn`t until the 19th century that fine cooking and cookery books became really popular. Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated the best years of their lives to collating, trying out, and recording recipes that were common in the better off homes of the day. By the advent of the twentieth century, cookbooks were in high demand, mostly due to increased literacy, people having increased leisure time and having more money. The introduction of the TV gave us cooking programs and the accompanying recipe books. Which pretty much brings us up to date and the internet revolution, permitting everybody to search through massive numbers of recipes like the ones you can find on our site. |
