The History of Recipes
Transcribed cooking instructions as a concept can be traced back into antiquity, in fact as far as early Egypt, and possibly even further than that. In practice though, these, old recipes were just very basic hieroglyphic or cunieform instructions for food preparation.
In an interesting twist, the most ancient recipe found, according to historians are a few clay tablets in Sumerian describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel wonderful. During the time of the Romans a man called Apicius compiled a collection of scripts showing how to cook the recipes prepared by wealthy roman citizens. In his publication, he tells us how the meals of wealthy Romans were separated into hors d`oeuvre, main course and desserts, a style of dining still practiced today. Additionally, he recounts how the ancient Romans made use of many spices, including a few that will be familiar to modern chefs for example thyme, rue and asafoetida. Over the next few hundred years, the wealthy families of the West strove to lay on the most extravagent meals, and as a result cooks and their recipes were much in demand. However, it wasn`t until the nineteenth century that cookery and recipe collections reached a high level of popularity. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated the best years of their lives to collating, testing, and publishing recipes of the day. The arrival of TV brought us celebrity TV chefs and the demand for the accompanying recipe books. Which pretty much brings us up to date and the invention of the internet, permitting everyone to search through massive numbers of recipes like the ones you can find on this recipe site. |
