The History of Recipes
Experts have tracked the existence of recipes back into distant history, at least as far into history as the early Egyptians, and possibly even further. In practice though, generally, these old cookbooks were just very basic hieroglyphic or cunieform instructions for preparing food.
Fascinatingly, the oldest recipe discovered, according to experts in ancient history is a collection of clay tablets in Sumerian which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel blissful. As we move into The time of the roman empire 25BC a Roman scholar, called Apicius, assembled some scrolls detailing recipes cooked by the Romans. In his scrolls, Apicius recounts how the meals were separated into hors d`oeuvre, main course and afters, something that is very familiar to us today. Aspicius also recounts how the ancient cooks made use of many different spices and herbs, including many that are still in use today for example thyme, mint and parsley. As our culinary historical trip moves to more modern times there are some recipe books dating from the 1300s : a book entitled `Forme of Cury`, and another, similary named `Curye on Inglish`. The titles are a little misleading though, these are unconnected to the spicy food that appears on menues today, but instead accounts of the types of food prepared by the chefs of the rich people of those days. In the 15th century, knights returning from the crusades brought us many foods, spices and herbs from the holy lands, including spices such as basil and rosemary. These new culinary innovations prompted a torrent in manuscripts on cookery, some of which are kept safe in private libraries. The introduction of television brought us TV cookery programs and the spin-off recipe books. Which brings us neatly to the present day and the internet revolution, allowing us all to search through massive numbers of recipes like those on this site. |
