The History of Recipes
Food historians have traced the existence of recipes back into history, certainly as far back as the Egypt of the Pharoahs, and quite possibly further than that. Interesting though that maybe, in the main part, these ancient records were just simple pictorial recipes for preparing meals.
Fascinatingly, the oldest recipe in existence, according to historians is a collection of ancient tablets in the Sumerian language describing the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel `wonderful`. As we move into The time of the roman empire 25BC a man called Apicius compiled a number of scripts describing recipes cooked by wealthy Romans. In his publication, he tells us how the roman meals were split into hors d`oeuvre, main course and desserts, a very modern way of dining. Aspicius informs us how the cooks of Roman times were skilled in the use of a wide range of spices, including a few that will be familiar to modern chefs like bay, rue and dill. Over the following few hundred years, the wealthy families of Wesstern Europe competed with each other to serve the most extravagent banquests, and as a consequence, the best chefs and their recipes were much in demand. Even so, it wasn`t until the nineteenth century that cookery and recipe books became really popular. The Famous Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, devoted much of their lives to assembling, testing, and publishing recipes to help cooks of their time. The introduction of television brought us cooking programs and the demand for the spin-off recipe books. And that pretty much brings us to the present day and the invention of the internet, allowing everybody to access massive numbers of recipes just like those on this recipe site. |
