The History of Recipes
It is quite possible to follow the history of written cooking instructions far back into distant history, in fact as far back into recorded history as the early Egyptians, and quite possibly further than that. Having said that, mostly, these early cook books were just primitive pictorial instructions for preparing food.
The truth of the matter is, the most ancient recipe discovered so far, according to experts are some tablets in Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel exhilarated. As we move into Roman times around 25BC a roman called Apicius wrote a collection of documents showing how to cook the recipes prepared by the Romans. In his publication, he recounts how the meals of wealthy Romans were separated into hors d`oeuvre, entrees and afters, something we still use today. This early Roman chef recounts how the Roman chefs used many herbs and spices, including a few that are still present in modern kitchens such as bay, rue and asafoetida. Moving on, we find a couple of books from the fourteenth century : a recipe book titled `Forme of Cury`, and another titled `Curye on Inglish`. Don`t be fooled by the titles though, these are nothing to do with the spicy food that is familiar to us all today, but instead descriptions of the types of food served to the rich and powerful of those days. Later, in the 15th century, people returning from the crusades brought back many new foods, spices and herbs from Arab cuisine, including basil and rosemary. The introduction of these new foods and spices prompted a surge in manuscripts on cookery, most of which are kept safe in academic collections. During the following few centuries, the powerful and wealthy strove to lay on the best banquets, and because of this the best cooks and their collection of recipes were highly sought after. Notwithstanding that, it wasn`t until the 1800s that cooking and recipe books became popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, devoted their lives to collating, verifying, and recording recipes for their fellow cooks to enjoy. By the advent of the 1900s, cookbooks are starting to become popular due to higher levels of literacy, more leisure time and disposable income. The revolution that is television gave us celebrity TV chefs and the spin-off recipe books. Which brings us neatly up to date and the internet revolution, allowing us all to access thousands of recipes like the ones you can find on our web site. |
