The History of Recipes
It is possible to track the history of `recipes` far back into ancient history, certainly as far back into history as the Egypt of the Pharoahs, and maybe even further. Having said that, sadly, these old cookbooks were just simple pictorial, hieroglyphic or cunieform instructions for preparing food.
In fact, the oldest recipe discovered, according to academics is a series of tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel `blissful`. Later on, in The time of the roman empire 25BC a roman called Apicius created a collection of scripts detailing recipes enjoyed by wealthy roman citizens. In his publication, Apicius tells us how the meals were separated into starters, main meal and desserts, a style of dining still practiced today. This early Roman chef tells us how the chefs of Roman times were skilled in the use of a good variety of aromatic flavors, including a few that will be familiar to modern cooks such as basil, mint and asafoetida. Later, there were a couple of recipe books published in the 1300s ; a cookery book called `Forme of Cury`, and another called `Curye on Inglish`. Amusingly, they are unconnected to the spicy food that is popular today, but instead accounts of the types of meals prepared by the cooks of the upper classes. Later, in the fifteenth century, people returning from the crusades brought us a variety of foods and spices from the holy land, including spices such as parsley and basil. These new spices and herbs led to an eruption in books on cooking, many of which are now in private cookery archives. For the decades that followed, the upper classes competed to serve the most extravagent banquests, and consequentially chefs and their recipe collections were much in demand. Even so, it was during the 19th century the formal cooking and recipe collections rose to prominence. The Famous Mrs Beeton in the UK, and Fannie Merritt Farmer in the US, devoted much of their lives to collecting, trying out, and publishing the recipes that were being prepared for the better households. By the time we get to the 1900s, cookery books are highly popular as a result of better eduction, leisure time and having more disposable income. The arrival of television gave us TV cooks and the demand for the spin-off recipe books. Which brings us neatly up to date and the invention of computers and the internet, allowing everybody to access massive numbers of recipes such as those found on sites such as this. |
