The History of Recipes
It is quite feasible to track the history of written cooking instructions way back into the far past, certainly as far back into recorded history as the Egypt of the Pharoahs, and possibly even further than that. Interesting though that is, in the main part, these old recipes were just very simple hieroglyphic or cunieform instructions for food preparation.
The truth of the matter is, the oldest recipe discovered, according to academics is a collection of tablets in the Sumerian language describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel wonderful. As we move into Roman times around 25BC a roman called Apicius assembled a collection of documents detailing recipes enjoyed by wealthy Romans. In his works, he describes how the meals of wealthy Romans were divided into hors d`oeuvres, entrees and desserts, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. This early Roman chef informs us how the cooks of Roman times were skilled in the use of a good variety of spices and herbs, including a few that will be familiar to modern cooks such as basil, fennel and parsley. Moving on, we have a couple of recipe books published in the 14th Century : a cookery book entitled `Forme of Cury`, and another named `Curye on Inglish`. The titles are somewhat misleading tho`, these books have no connection with the indian curry that is served today, but instead accounts of the types of food prepared by the cooks of the nobility of the time. Later, in the 15th century, knights returning from the crusades brought back a variety of foods and spices from the holy land, such as parsley, basil and rosemary. These new foods and tastes caused an outbreak in books on cookery, the majority of which are now in private cookery archives. By the advent of the 1900s, cooking books are highly popular as a result of better eduction, people having more spare time and having more disposable income. Like it or not, the introduction of TV gave us cooking programs and the demand for the accompanying recipe books. Which pretty much brings us to the present day and the invention of the internet, allowing everyone to search through thousands of recipes such as those found on our site. |
