The History of Recipes
Transcribed cooking instructions as an idea can be traced far back into ancient history, certainly as far back into history as the Egypt of the Pharoahs, and potentially, even further back. In practice though, sadly, these ancient cookbooks were just very simple hieroglyphic instructions for preparing food.
In an interesting twist, the oldest recipe discovered so far, according to food historians are some stone tablets in the Sumerian language which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who drank it feel `exhilarated, wonderful and blissful`. Moving our culinary historical trip onwards, there were a couple of recipe books published in the fourteenth century ; a cookery book titled `Forme of Cury`, and another named `Curye on Inglish`. The titles are a little misleading though, these books are nothing to do with the curry that appears on menues today, but instead recipes for the types of meals served to the nobility of the time. Over the next few hundred years, the rich and powerful families of the West competed to serve the most extravagent banquests, and because of this the best chefs and their recipe collections were at a premium. Notwithstanding that, it wasn`t until the 1800s that formal cookery and recipe publications became popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, spent years to assembling, trying out, and recording recipes common in their social group. When we get to the 1900s, cookery books are highly popular as a result of higher levels of literacy, people having increased leisure time and having more money to spend. |
